Thanksgiving Goodies

Thanksgiving is coming up this Thursday! It is the perfect time to give homemade goodies to the people you appreciate. Here are some fun and easy thanksgiving treats you can make.

Mini pumpkin pies:

 It is impossible to forget about pumpkin pie! Everyone has got a pumpkin pie recipe they love and here is ours.

Ingredients: Pie filling, Pie crust, eggs and 1 bowl

First off, buy a small mini pie crust to fill your pumpkin purée with. Preheat oven to 350 degrees F (175 degrees C). Separate one egg, and place the egg white into a small bowl. Beat the egg white until slightly frothy, and brush the edges of each mini pie crust with egg white.

Place the remaining yolk into a bowl, and beat with the remaining 2 eggs. Mix the softened cream cheese, sugar, pumpkin, vanilla extract, and pumpkin pie spice into the eggs to make a smooth filling. Spoon about 2 tablespoons of the filling into each crust. Bake the pies in the preheated oven until the crust edges are golden brown and the filling is set, about 15 minutes. Allow to cool before eating.

Pumpkin whoopie pies

Ingredients: Brown sugar, cream shortening, vanilla extract, Flour, baking powder,baking soda,salt and cinnamon and ginger

In a large bowl, take cream shortening and brown sugar then stir them until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt, cinnamon and ginger; add to creamed mixture alternately with pumpkin.

Drop by rounded tablespoonfuls 2 in. apart onto greased baking pans; flatten slightly with the back of a spoon. Bake at 400° for 10-11 minutes. Remove to wire racks to cool. For filling, in a small saucepan, combine flour and salt. Gradually whisk in milk until smooth; bring to a boil. Reduce heat; cook and stir over medium heat 2 minutes or until thickened. Cover and refrigerate until completely cooled. In a small bowl, beat shortening, confectioners’ sugar and vanilla until smooth. Add chilled milk mixture; beat for 7 minutes or until light and fluffy. Spread on the bottoms of half of the cookies; top with remaining cookies.
